Overview

Ruby dress with shaded edges. Absolutely intense nose, on display black cherries in alcohol, morello cherry, plum, floral, sweet spice tones, and a breath of Mediterranean scrub. Fine territorial synthesis of taste, with dense tannins of excellent texture and tasty freshness that make it a harmonious picture of great depth. Persistent closure on smoky notes.

– Hand harvesting and careful selection of the grapes in the field and in the cellar;
– Alcoholic fermentation at controlled temperature with selected yeast strains.
– Maceration on the skins (15-20 days) and soft pressing.
Aging: In 1st-2nd passage wood (500 Lt.) for 30 months, of which at least 3 months in the bottle.

Pairings
Ideal with traditional Tuscan dishes, especially with game and full-bodied first courses (wild boar, roe deer, hare). Also excellent with aged cheeses.
