White wine is produced only with Fiano grapes from four different vineyards in as many municipalities in the province of Avellino: Candida, Montefredane, Lapio, and San Michele di Serino.
The bunches are harvested manually and transported to the cellar in small boxes to avoid crushing the berries. The grapes are subjected to a whole soft cluster pressing to obtain the flower. The vinification and aging on the fine lees for four months takes place entirely in steel vats.
